Multiple sheets can be assigned to one workbook when deploying from the Platform SDK. A workbook can be thought of as a collection of sheets or schemas to accomplish a certain task. If you are using Portal, you can deploy your sheets to the same Workbook if you'd like, or group them according to a certain use case. While workbooks aren't a component that is widely used in our current Flatfile products, they are a building block for some features to come!

You can only assign one sheet to each Portal. Each Portal will have a pre-defined data format it's expecting from your users, and the sheet defines the data you're expecting. It isn't possible to switch between multiple sheets for your Portal, so they should be configured with one sheet per Portal.
